Am I obsessed with this "summer in a jar"? You could say that.
SUMMER IS HERE, and I have been inhaling fruit like it's my JOB. Well, honestly I do that with fruit whether or not it's summertime...but I needed an intro, ya know?
So..we all know dipping our strawberries in chocolate, right? Maybe even some nutella, yogurt, whipped cream, ice cream, putting them on cereal, in our oatmeals, etc...
SURE, that's all normal..but the other day, I just saw someone on a social media platform do the unthinkable..
strawberries dipped in peanut butter.
At first, I was immediately turned off to the idea. But then i thought...is that not technically a modified peanut butter and jelly creation? Not to mention, I ADORE strawberries and I would be HONORED to eat a giant jar of peanut butter in one sitting with a serving spoon larger than my mouth..
Therefore: why wouldn't these two lovely things go together?
Don't knock it till you try it, am I right?
OH, WAS I RIGHT. The combo is quite magical. A perfect blend of sweet and savory, plus the different textures are such a delightful sensation when put together.. WOW.
SO...............magical moments like these naturally lead me straight to Overnight Oats.
It's summer. It's strawberry banana smoothie weather. THUS: I have more strawberries and banana's than I know what to do with, and I ALWAYS have more than enough peanut butter to feed a family of 15 (in a house of only 4..LOL!)
So I got to testing, and before I knew it, my NEW PB2 STRAWBERRY BANANA OVERNIGHT OATS WAS BORN!
I am above and beyond STOKED to be sharing this refreshing, delightful, bright and
sunshine-y breakfast recipe with you! I work my absolute hardest and try my absolute darndest to create dishes that make you CELEBRATE food, and bring a smile to our faces. We can all use one of those in these times. I hope you ENJOY!
tinyB's PB2 Strawberry Banana Overnight Oats
Serving Size: 1
Calories per serving: 380
(for recipe as written, with garnish!)
(recipe as written, without garnish--PB2, bananas, strawberries--): 270cal
YOU WILL NEED:
½ cup Gluten Free Rolled Oats
⅓ cup Unsweetened Vanilla Almond Milk
1 tsp Vanilla Extract
2 tsp Pure Maple Syrup
2 dash Cinnamon
1 tsp Chia Seeds
2 tbsp PB2 Powdered Peanut Butter w/1.5 tbsp water to prepare it
2 Strawberries
⅓ Banana
Salt, if desired!
METHOD:
1. Place all your goodies, not including the garnishes, in a glass mason jar* and stir!
2. Garnish as you please with the fruit and PB2. This can be done the night before during prep, or the morning you decide to dig in!
3. Screw that lid on TIGHT! Place in the fridge for 5 hours-overnight, or for up to 3 days 🍓🥣
4. Most importantly, ENJOY! YOU DESERVE IT!
Notes:
-Any oats will do! GF or non, but i love Bobs Red Mill
-Any milk will do! I use Unsweetened Vanilla from brands like Almond Breeze, Silk, or Trader Joes! Also, for thinner oatmeal, use ½ cup!
-In my experience, a mason jar works the best because the glass helps it stay colder in the fridge, and also the lids are nice and tight. But, of course, use whatever works for you!
