tinyB's FRENCH TOAST OVERNIGHT OATS!

Do you want oatmeal, yet you're SO BORED and TIRED of that plain ol' blah taste? Do you want something TASTEFUL like say...i dunno..french toast? WELL, these overnight oats can give you EXACTLY what you're looking for!

I don't know if you remember, but I say it often so maybe you just weren't paying attention..oops. I'll refresh you:


I am one of the few people in the world who get shunned for totally disliking breakfast foods.


DONT GET ME WRONG! THEY ALL TASTE REMARKABLE.


Waffles (team waffle > pancake, yeeee!), bacon, hash browns, sausage, french toast, omelettes...I love them, I truly do. However, they don't necessarily love me.


Let me explain:

Many people around the globe adore giant breakfasts. It doesn't matter WHO you are--breakfast rocks and thats the end of that. Period. Case closed. Shut up and move on.


I happen to be a very (very) small, overly active person who doesn't exactly eat too heartily in general.. so, eating a ton of food in the morning causes me to feel like..well..an elephant. Moreover, if you've ever read my "About Us" page, you know my challenges with food in general, and/or the lack-thereof. So eating big is not particularly ever on my to-do list, no matter how much I initially want to.


BUT, that's another story for another time!


THAT BEING SAID, the feeling of lethargy overtakes me in an overwhelming sort of way, it never really turns into the satisfied kind of full like most people get after a fun breakfast..and if I don't have the right kind of energy, and/or don't feel good enough to move around, I tend to genuinely become anxious and irritable, which is not a happy feeling!

aaaand I LIKE HAPPY FEELINGS!


BASICALLY THIS WHOLE ISSUE IS HIGHLY UNFORTUNATE because if I could eat a belgian waffle slam from Denny's everyday of the week, I would. WHY BODY? WHY BRAIN? WHY?


SO, enough with the personal shhhtuuuffffs..you're probably hungry by now and just want the recipe..


So yes, all that to say, I have decided to give up on the breakfast world, and stick to small breakfasts that I can be nourished, happy, and satisfied with! (Breakfast for dinner, however...that's a different story I'll eventually gain the courage to venture to later..)


Though, I do miss the taste and excitement to wake up to the classic joys of the breakfast foods I know and admire.


THEREFORE, I created a small loophole.

I love oatmeal.

I love french toast.

I cant eat french toast.

I CAN eat oatmeal............................so. Let's combine them, shall we?


These French Toast Overnight Oats are perfectly sweet, delicious, flavor packed, healthy, and REALLY bring on that nostalgic taste of your favorite breakfast food! It will wake you up with a smile, GUARANTEED, and keep you satisfied and happy, just like all breakfasts will do! I'm SO stoked to share my secrets with you!





As always, this recipe is suuuuuper yummy and made with oh so much love, so try it as is! OR, note that the ingredients are 100% interchangeable, yet will alter the nutrition a bit!


tinyB's French Toast Overnight Oats

Calories Per Serving: 225

Serving Size: 1


YOU WILL NEED:

½ cup gluten free rolled oats (i use Bob’s Red Mill, but you can use any oats!)

⅓ banana

½ cup unsweetened vanilla almond milk* (any milk will also do! See notes)

½ tsp cinnamon

1 tsp chia seeds

½ tsp vanilla

1 tbsp pure maple syrup

Fresh fruit such as blueberries, strawberries, etc. for garnish (optional, but HIGHLY recommended! Adds a lovely amount of freshness! Nutrition does not include garnish.)


METHOD:

1. If garnishing the night before, place diced strawberries or any garnish you may desire to the side!

2. Add ALL of the other delicious ingredients together in a mason jar* (or any airtight glass jar with a lid!) and mix together.

3. Once combined, add garnish (or wait till the morning to add goodies!) and put the lid on!

4. Store for 5 hours-overnight, or for up to 4 days.

5. ENJOY!!! You deserve it 😋

Notes:

- If you would like this jar of oats thicker, use ⅓ cup milk rather than ½ cup!

-Any jar with a tight lid will do! In my experience, glass jars tend to chill better, keeping the ingredients cold and fresh even for a few days. Plus, the mason jar is perfect for a personal serving! HOWEVER, if you have a method that works for you, go for it!

-Some optional toppings include stevia sweetened chocolate chips (or any kind!), strawberries, blueberries, raspberries, blackberries, whipped cream--really, the options are endless! Whatever makes you excited, GO FOR IT!
